The Quebecois would like ly be offended if I called it poutine as it’s mild white cheddar cheese rather than cheese kurds.

Though two things.

1, the Quebecois are offended by everything,

and

2, nob ody cares if a Quebecois is offended.

I do greens. Today while not being ‘greens’ they were veg.

Cumberland sausage and black pudding slice, honey roast parsnips, carrot and swede mash, mashed potato and roast potatoes.

Salmon, green beans, gnocchi and cheese sauce.

Salmon, broccoli and cheese sauce and roasted cherry tomatoes gnocchi.

Duck, cucumber, steamed rice and hoisin sauce.

Depends on my mood and if I’m hungry but lazy, peckish but have loads of time, etc...

Lol. Quebecois are the only people who actually unite the British, Germans and the French. Which is quite something.

We all take the piss out of each other, or slag each other off but if one says, ‘urgh, the Quebecois, am I right!?’, everyone else would go, ‘yep, sigh’.

I’m québécois and sometimes make my poutine with grated cheese.(we don’t allways have fresh cheese kurds on hand)

We have cottage cheese, but no one would dream of adding cottage cheese to chips, then gravy. 

I keep getting told that I shouldn’t use grated cheese on chips, cheese and gravy for it to be poutine . Just as some from North America were disgusted we in the U.K. use bechamel sauce on top of lasagne.

Hell there was an Italian food critic from well, Italy, who was disgusted we use spaghetti and not tagliatelle on ‘spaghetti bolognese’ in the U.K. even though spaghetti is in the name and some of the food we get is made and brought over, from Italy. WTF.

The way I figure it, food can be a very personal thing. I mean, look at the holy war about pineapple on pizza. Pizza especially seems to be a sore point for many people - some like thin crust, some thick crust. Some like tomato sauce, some prefer cream sauces. Some like pineapple, others despise it. A food critic is basically taking their own opinion and publicizing it.  I find far too often their opinions are exactly that - opinions, and don’t apply to the general populous.

True food is personal. People like to personalise food by either adding something or taking away something they don't like. 

But it’s odd because if you look it up. Bolognese sauce should be with a tagliatelle, etc... and not with spaghetti and according to many Italian sources, macaroni pasta shouldn’t be paired with cheese (apparently it’s an American thing as is spaghetti meatballs, apparently started by Italians that emigrated to America all those years ago). Yet macaroni and cheese work for many Anglo speaking countries, so is spaghetti bolognese that’s made in Italy just Italians humouring the Anglo speaking countries of the world.

Some Spanish recently went crazy after it was found that some places put sliced chorizo in paella, some even argued it was ‘cultural appropriation’ (I hate that crap). Do we do the same when vegetarians and vegans do a meat free bolognese, which is a meat based source.

I found it’s literally taking a bit more time with your food, it can go from a bland unenjoyable chore to something you can enjoy with your eyes and savour in your mouth.

I hope you find your next level and enjoy the journey getting there.
